Sri Lankan Shrimp Curry

Ingredients

One large Onion.

1 Tsp fenugreek seed (optional)

1 Tsp fennel seed (optional)

2 Tbsp oil

2 tomatoes

1lime size tamarind mixed in water or 2 tsp tamarind concentrate (this is if you are not using the tomatoes listed above)

1 tablespoon chili powder

salt to taste

1cup coconut milk (optional).

Fry the onion with spices when the onion becomes golden brown add chili powder and fry for two seconds

Then add tomato pieces and fry the tomatoes until they become cooked

Add shrimp and add 1/2 a cup of water and cover with the lid when the shrimp is cooked well reduce the heat and for simmer for two minutes

If you are not adding tomatoes take the lime size tamarind and dissolve in the water put that water instead of tomatoes

The last step you like you can add some coconut milk this brings out the authentic Sri lanka flavor. The coconut milk is added and allowed to simmer on low flame, till tiny specks of oil are seen on the surface.
