Vadai recipe

Wash 1 cup of urad dhal and soak in 2 cups of water for about 3 hrs.

Drain the water and grind the soaked dhal adding very little water.

Add the ground mixture to bowl and whisk for about a min and set aside.

Coarsely grind 2 chopped onion, 5 garlic cloves, 1 inch of peeled ginger and add to dhal batter.

Add the following to the batter

  1. I tsp cumin
  2. 1 tsp coarse ground peppercorn
  3. a sprig of curry leaves
  4. 2 chopped green chillies
  5. 3 table spoons chopped coriander leaves (optional)
  6. Salt to taste
  7. I tsp fennel seeds

Mix well

In small pan add oil for deep frying.

Shape the batter into a donut shape and fry turning both sides
